HOM RECIPE: KALE’IN IT!
Massaged Kale Salad
Introduction:
This recipe can use any salad green (arugula, baby kale, spring mix, or spinach). The vinaigrette is simple and delicious on green or grain salads.
Equipment Needed:
Knife, cutting board, mixing spoon, large and small bowl, whisk, measuring cups, measuring spoons, zester. grater, and peeler, tongs to serve

Ingredients:
Salad
1 bunch of kale, chopped and stemmed
1 carrot, shredded
2-3 radish, thinly sliced
¼ cup additional veggies
¼ cup dried cranberries
⅛ cup sunflower seeds
Dressing
¼ cup olive oil
⅛ cup lemon juice
¼ cup honey (optional)
1 garlic cloves, minced
¼ cup parmesan cheese
Salt and pepper to taste
Directions:
Stem and chop the kale
Make the dressing: combine oil, lemon juice, honey, parmesan, garlic, salt and pepper and whisk together. Pour over chopped kale and massage kale with hands for 3-5 minutes. Set aside for 10-15 minutes
Shred the carrot, chop additional veggies, and thinly slice the radish.
After 10-15 minutes add the prepared veggies, cranberries, and sunflower seeds to the kale
Toss together and serve!
