Massaged Kale Salad
This recipe can use any salad green (arugula, baby kale, spring mix, or spinach). The vinaigrette is simple and delicious on green or grain salads.
Knife, cutting board, mixing spoon, large and small bowl, whisk, measuring cups, measuring spoons, zester. grater, and peeler, tongs to serve

1 bunch of kale, chopped and stemmed
1 carrot, shredded
2-3 radish, thinly sliced
¼ cup additional veggies
¼ cup dried cranberries
⅛ cup sunflower seeds
¼ cup olive oil
⅛ cup lemon juice
¼ cup honey (optional)
1 garlic cloves, minced
¼ cup parmesan cheese
Salt and pepper to taste
- Stem and chop the kale
- Make the dressing: combine oil, lemon juice, honey, parmesan, garlic, salt and pepper and whisk together. Pour over chopped kale and massage kale with hands for 3-5 minutes. Set aside for 10-15 minutes
- Shred the carrot, chop additional veggies, and thinly slice the radish.
- After 10-15 minutes add the prepared veggies, cranberries, and sunflower seeds to the kale
- Toss together and serve!
