NOVEMBER HARVEST OF THE MONTH – WINTER SQUASH

Butternut, Acorn, Delicata, Spaghetti, Kabocha, Pumpkin; these are all varieties of winter squash that can be found right here in Montana.

Winter squash have a thick exterior which is what allows them to be more resilient to harsh weather and provides them with longer freshness after being harvested. When shopping for winter squash, you will want to choose one that has a firm skin without cracks or blemishes. If you are looking for pumpkins to eat, avoid the larger ones since they are used more for carving and decorations. 

Winter squash are a great way to add body to a meal while maintaining high nutritional value. Winter squash are high in Vitamins C and A, and fiber.
